Winchester Cheese Company, located in Winchester, California, is not impressive from the outside. In fact, the whole operation is located in a series of portables. Appearances aside, the cheese is very good. Winchester Cheese makes all of its cheese from raw milk. They only produce Gouda cheese but they have different flavors such as jalapeno gouda and smoked gouda.
My favorite cheese there was the super-aged Gouda. It had a sharp, fruity flavor with a hazelnut aftertaste. It was crystalline and crumbly in texture. I was very impressed. I also tried the King Tut Cheese which is the most aged cheese they have. I really appreciated the flavor, but I liked the texture better on the super-aged.
After looking around the store, I decided to go and see the cheese being manufactured. Unfortunately, I was only able to see them put the rennet in the milk since the employees had left for lunch.
On leaving, I bought a big wheel of the super-aged gouda. I really like the cheese, but if I were to buy another wheel of cheese from Winchester, I would probably buy the aged gouda. The super-aged is a little too intense to eat a whole wheel.
